1 teaspoon canola oil
1 onion, finely chopped
1 clove garlic, minced
1 jalapeño pepper, seeded and finely chopped
2 teaspoons ground cumin
1 cup cooked black beans
12 ounces 90% lean ground beef
2 tablespoons tomato paste
2 tablespoons fresh cilantro, chopped
1 teaspoon dried thyme
½ teaspoon salt
½ teaspoon black pepper
4 whole-wheat Kaiser rolls, split and toasted
Tomatosalsa, for garnish
Shredded lettuce, for garnish
Heat the oil in a small skillet and cook the onion until lightly golden, about three minutes.
Stir in the garlic, jalapeño pepper, and cumin and cook for about two minutes. Remove from heat and transfer to bowl. Add the beans and mash with a potato masher. Add the beef, tomato paste, cilantro, thyme, salt, and pepper. Mix until even.
Shape the mixture into thick patties and grill until cooked, about five minutes for each side.
Place on toasted rolls and use salsa and lettuce as garnish.
