4 green zucchini, sliced
2 yellow summer squash, sliced
8 green onions, chopped
6 cloves garlic, minced
2 teaspoons salt
2 tablespoons olive oil
1 cup feta cheese
1/4 cup fresh basil, chopped
Preheat an oven to 350 degrees Fahrenheit.
Combine the zucchini, squash, and onions in a bowl and add the olive oil, garlic, and salt.
Arrange the zucchini and summer squash on a greased roasting pan. Sprinkle feta cheese over the vegetables and roast for 25 minutes.
Take out of the oven and add chopped basil over the vegetables. Mix well.
