NCS is committed to providing sound nutrition programs that educate, equip, and encourage individuals to develop healthy eating and lifestyle habits to maintain or improve overall health and well-being.

In a climate where food and nutrition advice are prevalent from many sources, some of which are not credible, the service is important in that it provides sound, scientifically-based nutrition information. The dietitian, who has received a minimum of five years of education, training, and credentialing, will help develop an individualized treatment plan that will meet the medical needs of the client. The dietitian can assist the client by working through and developing strategies for obstacles which can interfere with lifestyle change.

Our Dietitian Carol W. Johnson, MS, RDN, LDN has been serving the nutritional needs of children and adults for over 22 years. She received her Bachelor of Science in Foods and Nutrition from Meredith College. She completed her dietetic internship at the University of Kansas Medical Center and received her Master of Science from the University of Kansas. She has provided nutrition care in a variety of settings to include hospitals, a state agency, schools, fitness facilities, and the home. She established Nutrition Counseling Services, LLC in 2003, serving individuals and groups in the office and corporate settings.

Carol believes that we each have been given a gift “a gift of life and health“ and we have the responsibility to care for ourselves to the best of our abilities. Her passion is to equip individuals with the knowledge and tools for healthy eating to maintain or improve health and reach their God-given potential.

Interested in healthy eating for a healthier life? Do you need to lose weight or control a disease (such as diabetes, high blood pressure, or high cholesterol)? Are you tired of trying diet after diet without long-lasting results?

Nutrition Counseling Services (NCS) offers a wide variety of nutrition services to include individual sessions, group sessions, cooking classes, and special events to help meet your nutrition and health goals. The focus is on lifestyle change through healthy eating and physical activity/exercise that will produce long-term results. To help you achieve your goals, NCS will develop an individualized program to meet your specific needs though one of our most popular programs listed below:

Healthy-Foods Weight Management Program

Includes 6 (1 hour) visits with a Registered Dietitian and participants receive free Weekly Weight Checks. Topics Include:

Visit 1: Develop Individualized Plan
Visit 2: Menu Planning & Resources
Visit 3: Grocery Store Tour
Visit 4: Physical Activity
Visit 5: Kitchen Makeover
Visit 6: Long-Term Weight Maintenance

Sensible Eating Program
Build a healthy diet in a stepwise progression as you learn about healthy food choices within each food group (grains, meats and beans, oils, vegetables, fruits, and dairy products). After your initial assessment visit, you will receive six visits, each one focusing on a new food group. You will have time between visits to incorporate healthy changes within your diet. Recipes, menus, and meal planning ideas for each group will be discussed. Additional visits available as needed.

Lifestyle Change Program

Using the toolkit developed by Robert F. Kushner, MD, Nancy Kushner, MSN, RN, and Dawn Jackson Blatner, RD entitled Counseling Overweight Adults: The Lifestyle Patterns Approach and Toolkit, clients are able to rank behaviors in three major areas: eating patterns, exercise patterns, and coping patterns. Based upon the results of an interactive quiz, clients are given goals to help change their individual habits and behaviors which have led to their excessive weight gain and/or unhealthy eating and activity patterns. The goals and progress in meeting goals are tracked over time.

Disease Management Programs

Based upon guidelines from the American Dietetic Association, you will be provided Medical Nutrition Therapy (MNT) to help manage your disease through healthy eating. Common diseases include, but are not limited to, the following:
