2 ¼ cups whole wheat flour
¾ cup granulated sugar
¾ cup brown sugar
1 cup non-hydrogenated margarine, softened
1 ripe banana, mashed
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla extract
1 teaspoon cinnamon
Preheat an oven to 350 degrees Fahrenheit.
Combine the flour, salt, and baking soda in a small bowl.
Place the margarine, granulated sugar, and brown sugar in a large bowl and beat ingredients until smooth.
Mix in the vanilla extract and mashed banana. Continue beating and slowly add the flour mixture to the bowl.
Place small spoonfuls of the mixture, about an inch apart, onto an ungreased cookie sheet.
Bake the cookies in the oven for 10 minutes or until the edges of the cookies are golden brown.
