Cake:
½ cup unsweetened applesauce
1 ½ cups sugar
3 egg whites
1 cup light sour cream
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
2 cups frozen blackberries, thawed
Topping:
½ cup packed brown sugar
1 tablespoon all-purpose flour
1 teaspoon cinnamon
1 tablespoon butter, softened
Preheat oven to 350°F. Grease a 9x13 inch baking pan.
Combine the applesauce and sugar.
Beat in the egg whites.
Add the vanilla and sour cream.
Combine the baking soda and flour together and then mix into the batter.
Stir the blackberries into the batter.
Transfer the batter into the baking pan.
Combine the topping ingredients to form a crumbly mixture.
Sprinkle the cake topping on top of the cake batter.
Bake in the oven for 30–40 minutes, or until done.
When cooled, slice the cake into 16 pieces.
