1 tilapia fillet (4 ounces)
1 teaspoon olive oil
½ lime
½ tablespoon cilantro, chopped
½ cup spinach, cooked
¼ cup tomatoes, chopped
1 tablespoon Parmesan cheese, shredded
½ teaspoon garlic powder
Coat the fillet with the olive oil. Squeeze the juice of the lime onto the fillet while removing any seeds.
Sprinkle the garlic powder and cilantro over the fish.
Broil the fillet approximately 6 inches away from heat for 5-7 minutes.
When the tilapia flakes easily with fork, remove from the broiler.
Serve the tilapia on top of cooked spinach.
Top with chopped tomatoes and Parmesan cheese.
