1 1/2 pounds boneless, skinless chicken breast or tenderloins, diced
2 cups low-sodium chicken broth
2 small cans condensed cream of mushroom soup
3 ounces Neufchatel (low fat) cream cheese
4 tablespoons fresh chives
1 cup canned mushrooms, drained
Add the chicken broth and chicken to a non-stick pan at a high heat until boiling.
Lower the heat to a medium-high for 30 minutes. Stir occasionally.
When the chicken is cooked, add the remainder of the ingredients and cook for 5-10 minutes until the cheese is melted.
Serve with noodles or rice.
