1 pound pork tenderloin
1 teaspoon chili powder
1/2 teaspoon salt
1/8 teaspoon ground chipotle pepper
2 teaspoons canola oil
1/4 cup apple cider
1 tablespoon maple syrup
1 teaspoon apple cider vinegar
Prepare the pork by trimming the tenderloin and cutting crosswise into 1-inch thick medallions.
In a small bowl, combine the chili powder, salt, and ground chipotle. Sprinkle this mixture on both sides of each pork medallion.
Heat the oil in a large skillet and cook the pork until golden in color, about 2 minutes per side.
When the pork is cooked, add the cider, syrup, and vinegar to the pan. Bring the mixture to a boil then reduce heat to medium.
While on medium heat, turn the pork to maintain a coating with the mixture. Continue to cook for 2 minutes, or until the sauce reaches a thick glaze consistency.
Remove the pork from the heat and serve with the remaining glaze.
