2 ounces pepper jack cheese
4 boneless skinless chicken tenders or 4 chicken breast halves
1 teaspoon taco seasoning
1 tablespoon vegetable oil
Preheat an oven to 350 degrees F and grease a baking pan.
Cut the cheese into two strips. Pound the chicken with a meat mallet to flatten.
Cover the center of the chicken with a piece of cheese, fold the chicken over the cheese, and keep it together using toothpicks. Rub the taco seasoning over the outside of chicken.
Brown the chicken on both sides in a large skillet and remove the toothpicks. Transfer the chicken to the baking pan.
Bake the chicken uncovered for 25-30 minutes or until the chicken is thoroughly cooked.
