1 tablespoon vegetable oil
1 pound cubed boneless, skinless chicken breast
1 1/2 teaspoons vegetable oil
1 3/4 cups carrots, thinly sliced
1/2 cup onion, vertically sliced
1 teaspoon dried basil, crushed
1 tablespoon water
1 cup fresh or frozen snow peas
1 medium baking apple, cored and thinly sliced
2 cups cooked brown rice
In a large nonstick skillet, add 1 tablespoon of vegetable oil and the cubes of chicken.
Cook the chicken until lightly browned, then remove chicken from skillet.
In the same skillet, heat the remaining vegetable oil and add the carrots, onion, and basil. Cook until the carrots are tender.
Add the water and pea pods to the skillet and cook for about 2 minutes.
Remove the skillet from heat and add the apple slices and chicken. Stir to combine and serve immediately.
