2 boneless chicken breasts
1/2 cup apple, chopped
2 tablespoons cheddar cheese, shredded
1 tablespoon bread crumbs
1 tablespoon butter
1/4 cup dry white wine
1/4 cup and 1 tablespoon water
1 1/2 teaspoons cornstarch
1 tablespoon fresh parsley, chopped
In a large bowl, mix the apples, cheese, and bread crumbs together.
Slice the chicken breast to ¼ inch thickness and spread the apple mixture over the chicken breasts. Roll the chicken and place a toothpick in the chicken to keep its shape.
Over medium heat, brown the chicken in butter for 2 minutes.
Pour the wine and water in the skillet and cover. Cook for 15-20 minutes.
Remove the chicken to plates, reserving the sauce.
Add 1 tablespoon of water to the cornstarch, and mix into the sauce in the skillet, allowing it to thicken.
Pour the sauce over chicken and add parsley for garnish.
