2 tablespoons sesame seeds
1 teaspoon ground coriander
1/8 teaspoon cayenne pepper
1/8 teaspoon celery seed
1/2 teaspoon minced onion
1/4 teaspoon ground cumin
1/8 teaspoon ground cinnamon
1 tablespoon sesame oil
1 pound pork tenderloin, sliced into 4 portions
Preheat oven to 400 degrees Fahrenheit and spray a baking dish with cooking spray.
Add sesame seeds in a single layer on a saucepan over low heat, cooking about 1-2 minutes until the seeds are golden. Remove the seeds from heat and allow to cool.
Combine coriander, cayenne pepper, celery seed, minced onion, cumin, cinnamon, sesame oil, and toasted sesame seeds in a medium-sized bowl, mixing well.
Place pork tenderloin on baking dish and rub both sides with the spice mixture.
Bake 15 minutes until the meat is no longer pink or a meat thermometer reaches 160 degrees Fahrenheit (medium) or 170 degrees Fahrenheit (well done).
Transfer to plates and serve immediately.
