2 tablespoons canola oil
2 tablespoons fresh ginger, peeled and grated
1/2 teaspoon ground cumin
4 cups water
2 cups basmati rice
2 teaspoons salt
1 large lime, zested and juiced
Heat the canola oil in a large saucepan over medium heat until very hot.
Cook the ginger and cumin in the pan for about 1 minute.
Add the water and bring to a boil. When boiling, add the rice and salt. Stir to combine.
Cover and cook the rice for about 15 minutes over low heat. There should be no water left in the pan and the rice should be tender.
Stir in the lime juice and zest. Serve immediately.
