1/4 cup fresh lime juice
2 tablespoons fish sauce
2 tablespoons packed brown sugar
1 pound ground turkey
1 small green chili (serrano or Thai), finely minced
1 small shallot, finely chopped
1 teaspoon grated lime zest
1 pinch salt
1 pinch pepper
2 teaspoons fish sauce
3 tablespoons vegetable oil
1 medium head red leaf lettuce, separated
2 carrots, peeled and julienned
1 red bell pepper, julienned
1/2 cup fresh mint leaves
Preheat a stove top to medium-high heat.
Combine the lime juice, 2 tablespoons fish sauce, and brown sugar in a small mixing bowl.
Combine the turkey, chili, shallot, lime zest, salt, pepper, and 2 teaspoons fish sauce. Form into 8 thin patties.
Brush the patties with oil and grill for 3 minutes. Flip and grill for an additional 3 minutes or until thoroughly cooked.
Toss the lettuce with carrots and bell pepper and divide onto plates. Place two turkey patties over each salad and drizzle with the prepared dressing. Top with mint.
