1 head garlic
4 tablespoons extra-virgin olive oil, divided
Juice of 1 lime
2 tablespoons red wine vinegar
1 tablespoon fresh ginger, grated
1 tablespoon toasted sesame oil
1 tablespoon reduced-sodium soy sauce
Freshly ground black pepper, to taste
Preheat the oven to 400 °F. Remove papery skin from the garlic head, but do not separate the cloves. Expose the cloves by slicing off the tip of the garlic head.
Place the garlic on aluminum foil, and coat with the tablespoon of olive oil. Wrap in foil, and bake for 40-60 minutes or until soft. Remove from the oven, unwrap, and allow the garlic to cool.
Squeeze the garlic from the skins into a food processor. Add the remaining olive oil and next the 5 ingredients to the processor, and process until smooth. Season with the pepper, to taste.
