2 pounds asparagus
14 ounces canned mandarin oranges
2 tablespoons olive oil
Salt and black pepper, to taste
To make sauce, drain the canned oranges and puree in blender until smooth.
Trim off the bottoms of the asparagus, and lay asparagus stalks on baking sheet. Drizzle the asparagus with olive oil, and season with salt and pepper. Roast the asparagus in a 425 degree F oven for 10 minutes.
Remove the asparagus from oven, and place in a skillet. Add the pureed oranges, and cover. Five minutes prior to serving, heat on high and cook until asparagus spears are tender.
