2 medium zucchini
1/2 cup seasoned bread crumbs
1/8 teaspoons black pepper
2 tablespoons grated Parmesan cheese
2 egg whites
Set an oven to preheat to 475-500 degrees F.
Mix the bread crumbs, pepper, and Parmesan cheese in a bowl.
In a separate bowl, beat the egg whites.
Cut the zucchini into 1/4 inch slices. Coat each piece in the egg whites and then the bread crumb mixture. Place the pieces on a greased baking sheet.
