1 pound ground beef
1 medium onion, chopped
1 clove garlic, chopped
1 can whole tomatoes
1 jalapeño pepper, chopped
½ teaspoon salt
¼ teaspoon black pepper
4 large papayas
2 tablespoons Parmesan cheese, grated
Mix the ground beef, onion, and garlic together in a skillet and cook until the beef is light brown. Drain and then stir in the tomatoes, jalapeno, salt, and pepper. Heat until the mixture begins to boil and then reduce the heat and allow the mixture to simmer for 10 minutes.
Cut the papayas lengthwise into halves and remove any seeds. Place 1/3 cup of beef mixture in each papaya half. Sprinkle the papayas with the Parmesan cheese.
Place the stuffed papayas in a shallow roasting pan. Bake uncovered at 350 degrees for about 30 minutes.
