1 cup sugar
3/4 cup shortening
1 1/2 tablespoons water
1 1/2 tablespoon olive oil
1 teaspoon baking powder, mixed together
1 cup grated carrots
2 cups flour
2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
Orange glaze
1/2 cup powdered sugar
1 teaspoon orange juice
1/2 teaspoon water
Cookies
Set an oven to 350°F.
Blend the sugar and shortening thoroughly with a mixer or whisk.
Mix the water, oil, and baking powder together and add to the sugar and shortening mixture. Mix in the carrots.
Combine the flour, baking powder, and salt in a different bowl.
Stir the mixtures together. Add the vanilla extract.
Place by spoonful onto cookie pan.
Bake for 15-18 minutes, or golden brown.
Spread the orange glaze lightly over the cookies, if desired.
