1 cup canned pumpkin
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups oatmeal
1 cup dried cranberries
1/2 cup almonds
Preheat an oven to 350 degrees F. Cover a cookie sheet with aluminum foil.
In a large bowl, combine the canned pumpkin and brown sugar. Add the eggs and vanilla extract, beating thoroughly. Add the flour, baking soda, cinnamon, and salt to this mixture. Mix in the oatmeal, cranberries, and almonds, stirring well.
Take spoonfuls of the mix, roll them into circles, and place them evenly on the cooking sheet.
Bake for 10-12 minutes.
