2 tomatoes, diced
2 tablespoons fresh basil, chopped
1 teaspoon fresh oregano, chopped
1 tablespoon garlic, minced
2 teaspoons extra-virgin olive oil
Four 4-ounce halibut fillets
Preheat the oven to 350°F.
Spray a light coat of cooking spray onto a 9 x 13-inch baking pan.
Add the tomato, basil, oregano, and garlic to a small bowl and toss to mix. Drizzle olive oil over the tomato mixture and toss to coat evenly.
Place the halibut fillets onto the baking pan and top with the tomato mixture. Bake the fish and tomato mixture for approximately 10-15 minutes or until the fish becomes opaque throughout.
Place equal portions of the halibut and tomato salsa onto 4 dinner plates and serve immediately.
