6 ounces spinach leaves
1 14.5-ounce can no-salt-added diced tomatoes, drained
1 whole-wheat thin pizza crust, 12-inches
2 fully cooked, all-natural, deli chicken sausages, sliced into 1/4-inch thick pieces
3 ounces part-skim mozzarella cheese, grated (about 3/4 cup)
Preheat an oven to 450 degrees F.
Spray a skillet with cooking spray and heat on low to medium heat. Add the spinach to skillet and cook until wilted, about four minutes. Remove from heat and season with black pepper.
Add the tomatoes into a mesh strainer and press out the liquid. Spread the tomatoes on the pizza crust then top with spinach, chicken sausage, and mozzarella.
Bake in oven for 10 minutes, or until the cheese is melted and the chicken sausage is lightly browned.
Slice into 6 pieces and serve.
