1/3 cup olive oil
1 large onion, thinly sliced
2 bunches spinach, cut into ribbons (1 pound)
1 1/2 cups ricotta cheese
4 eggs
1 cup feta cheese, crumbled
1 tablespoon dried oregano
Salt and pepper to taste
Preheat an oven to 375 degrees F.
Put the oil in a pot and begin to heat on high.
Add the onion and sauté until clear. This should take about 3 minutes.
In bunches, add the spinach, and sauté until the leaves are just wilted.
Mix together the ricotta cheese and the eggs by lightly beating in a bowl
Transfer the spinach mixture, and add the feta, oregano, salt and pepper.
After mixing thoroughly, pour the mixture into a greased 9 x 13 inch pan.
Bake until the top is lightly brown, which should take about 40 minutes.
Let cool and serve warm or at room temperature
