Ingredients

  • 1/3 cup olive oil

  • 1 large onion, thinly sliced

  • 2 bunches spinach, cut into ribbons (1 pound)

  • 1 1/2 cups ricotta cheese

  • 4 eggs

  • 1 cup feta cheese, crumbled

  • 1 tablespoon dried oregano

  • Salt and pepper to taste

Directions

  • Preheat an oven to 375 degrees F.

  • Put the oil in a pot and begin to heat on high.

  • Add the onion and sauté until clear. This should take about 3 minutes.

  • In bunches, add the spinach, and sauté until the leaves are just wilted.

  • Mix together the ricotta cheese and the eggs by lightly beating in a bowl

  • Transfer the spinach mixture, and add the feta, oregano, salt and pepper.

  • After mixing thoroughly, pour the mixture into a greased 9 x 13 inch pan.

  • Bake until the top is lightly brown, which should take about 40 minutes.

  • Let cool and serve warm or at room temperature
