1/4 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups whole wheat flour
1/4 cup olive oil
1/4 cup 1% milk
2 medium bananas, mashed
1 teaspoon vanilla extract
1/3 cup raisins
Preheat an oven to 375 degrees F.
Combine the flour, sugar, salt, and baking soda in a bowl and stir well.
Add the milk, mashed bananas, oil, and vanilla and mix until the dry ingredients are just moistened.
Fold the raisins into the mixture.
Fill paper-lined or non-stick muffin cups two thirds of the way full with muffin batter.
Bake the muffins for 15-20 minutes or until lightly brown. Remove immediately from pan.
