1 tablespoon and 1 teaspoon olive oil, divided
1 16-ounce package pre-cooked gnocchi
1 medium yellow onion, thinly sliced
4 cloves garlic, minced
1/2 cup water
6 cups spinach, chopped
1 15-ounce can diced tomatoes
1 15-ounce can white beans, rinsed
1/4 teaspoon freshly ground black pepper
1/2 cup part-skim mozzarella cheese, shredded
1/4 cup Parmesan cheese, shredded
Heat 1 tablespoon of olive oil in a nonstick skillet over medium heat. Add the gnocchi and cook until plumped and slightly brown, about 5 minutes. Transfer to a bowl and set aside.
In the same pan, add 1 teaspoon of olive oil and the onion, cooking over medium heat for about 2 minutes. Add the garlic and water, cover, and cook until onion looks clear, about 4-6 minutes.
Stir in the spinach and cook until it starts to wilt, about 1-2 minutes. Stir in the beans, tomatoes, and black pepper, and bring to a simmer.
Add the gnocchi and sprinkle mozzarella and Parmesan cheese on top. Cover and cook until the cheese is melted, about 3 minutes.
