1/4 cup tofu, pureed
1 cup soy milk
1 tablespoon canola oil
1/2 cup water
1 1/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
Whisk the pureed tofu with the soy milk, canola oil, and water. Set aside.
Combine the flour, baking powder, and salt, and slowly mix this into the tofu mixture until all the lumps are beaten out.
Spray a griddle with cooking spray and drop a ladleful of pancake mix onto the griddle. When bubbles start to form, flip the pancake to cook the other side for 2 minutes. Serve immediately.
