2 bell peppers (red, yellow, or orange)
6 slices turkey bacon
3/4 cup shredded reduced fat cheddar cheese
1/4 cup chopped scallions
1/4 cup reduced fat sour cream
Preheat an oven to 350 degrees.
Remove the stems and seeds from the peppers and then cut them into quarters.
Place the pepper slices on a large, lightly greased baking sheet cut side up. Bake in the oven for 20 minutes or until soft.
While the peppers are cooking, cook the turkey bacon in a lightly sprayed pan on medium heat on the stove until crispy. Once it has cooled, chop the bacon into tiny pieces.
When the pepper slices are done cooking, remove from the oven and let cool slightly, but leave the oven turned on. Blot away any excess liquid from peppers with a paper towel.
Sprinkle the tops of the pepper slices evenly with shredded cheese, scallions, and chopped bacon, the put back into the oven and bake until cheese has melted, approximately 5-10 minutes. Serve with sour cream.
