3 cups cooked black lentils
4 large eggs
1/2 teaspoon sea salt
1 onion, finely chopped
1 cup toasted whole-grain bread crumbs
1 tablespoon extra-virgin olive oil
Place the lentils, salt, and eggs into the food processor. Puree the mixture; it should remain slightly chunky and runny.
Transfer the mixture to a mixing bowl and stir in the onion and bread crumbs. Allow the mixture to sit for a few minutes so the breadcrumbs can absorb some moisture.
The mixture should be moist, but water can be added if more moisture is needed. Form into 12 patties.
Heat the extra-virgin olive oil in a skillet over low-medium heat. Add 4 patties and cover. Allow the patties to cook for 7-10 minutes or until golden brown. Then flip and cook the other side until golden brown.
Remove from the skillet and place on a wire rack to cool. Cook the remaining patties.
