1 quart blueberries
2/3 cup (1 medium) ripe banana, sliced
1 cup nonfat plain yogurt
1/2 cup instant-dissolving sugar
1/4 cup frozen orange juice concentrate, thawed
1 tablespoon crème de cassis or black currant syrup
Add the blueberries to a food processor and puree. Once pureed, forced the blueberry mixture through a fine strainer and into a bowl in order to remove the skins.
Also puree the bananas in a food processor. Add the blueberry puree, yogurt, sugar, orange juice concentrate, and crème de cassis or black currant syrup. Process together until everything is just mixed in. If necessary, chill until cold.
Pour the puree into the canister of an ice cream maker and freeze according to the manufacturer's instructions. (May also freeze the mixture in a shallow metal cake pan until solid, about 6 hours. Break into chunks and process in a food processor until smooth.)
