1 tablespoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup mashed bananas
1/4 cup sugar
1 large egg
1/2 teaspoon vanilla extract
1/4 cup applesauce
Preheat an oven to 350 degrees F. Grease a muffin pan or line with paper muffin cups.
In a bowl, combine the flour, baking powder, baking soda, and salt.
In a separate, medium-sized bowl, combine the bananas, sugar, egg, vanilla extract, and applesauce.
Add the dry ingredients to the banana mixture and combine thoroughly.
Fill each muffin cup halfway with the batter. Bake for 15-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
