1 cup canned pumpkin puree
2 egg whites
¼ cup non-fat vanilla-flavored Greek yogurt
¼ cup unsweetened applesauce
½ cups brown sugar
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
½ teaspoon baking soda
½ teaspoon salt
1 ½ cups whole wheat pastry flour
½ cup chocolate chips
In a large bowl, mix the pumpkin, egg whites, yogurt, and applesauce together until smooth.
Then add the brown sugar, cinnamon, pumpkin pie spice, baking soda, and salt. Mix thoroughly.
Mix in the flour, add the chocolate chips, and stir.
Grease a muffin pan before placing batter into the cups. Bake at 350°F for 25 minutes or until done.
