2 1/2 cups hot cooked grits
3 tablespoons grated cheddar cheese
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

4 large eggs, divided
1/2 cup ice cubes, divided
Chopped chives (optional)
In a large bowl, mix grits, cheddar, garlic powder, salt and pepper. Cover bowl to keep warm.
Coat a small skillet with cooking spray and heat over medium heat. Break two eggs in skillet. When the egg whites begin to set, at 1/4 cup of ice cubes to pan. Cook eggs with ice cubes for an additional 2 minutes. Remove both eggs from skillet, and cook the remaining two eggs following the same procedure.
Put 2/3 cups of grits into four bowls and top with an egg. Garnish with black pepper and chives.
