1 3/4 cups all-purpose gluten free baking flour
1 1/2 cups mashed bananas
2 large eggs
2/3 cup packed brown sugar
1/2 cup finely chopped walnuts or pecans
1/3 cup canola oil
2 teaspoons baking powder
1 and 1/4 teaspoon cinnamon
1 teaspoon vanilla extract
1 teaspoon xanthan gum
1/2 teaspoon salt
Preheat the oven to 350 degrees and grease a 9 x 5-inch bread pan.
Beat together the oil, sugar, eggs, and vanilla in a large bowl.
Mix together the flour, xanthan gum, salt, baking powder, and cinnamon in a small bowl. Mash the bananas in another bowl.
Slowly add the dry mix and bananas into the wet mixture, mixing until smooth. Incorporate the nuts into the batter. Put the batter into pans and bake for 45 minutes to1 hour or until golden brown and a toothpick inserted into the center comes out clean.
