2/3 cup all-purpose flour
2 tablespoons sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 dash of salt
1 tablespoon chilled margarine, cut into small pieces
1/3 cup low-fat vanilla yogurt
2 tablespoons chopped dried peaches
1/2 teaspoon nonfat milk
Preheat an oven to 400 degrees F.
In a bowl, combine the sugar, salt, flour, baking soda, and baking powder.
Using 2 knives or a pastry cutter, cut the butter into the dry mixture until it resembles coarse meal.
Add the dried peaches and yogurt to the mixture until just moistened.
On a lightly floured surface, knead the dough lightly about 5 times.
Coat a baking sheet with cooking spray and pat the dough into a circle about 5 inches in diameter. Cut the dough into 4 pieces and separate slightly. Brush the nonfat milk over the scones. Bake for 10-15 minutes or until lightly golden.
