2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1 1/2 sticks unsalted butter
1 1/4 cups dark brown sugar
1teaspoon vanilla extract
1 large egg
Using a mixer, cream the brown sugar and butter on medium speed for 4 minutes or until fluffy.
In a separate bowl, whisk all dry ingredients.
Add the eggs and vanilla to the mixer and beat for 1 additional minute.
Add the dry ingredients to the mixer and mix until a cookie dough forms.
Cover the dough with plastic wrap and refrigerate for 30 minutes.
Cover a cookie sheet with parchment paper. Drop the dough onto the cookie sheet in the desired size and bake for 10-15 minutes at 350 degrees.
Let the cookies cool on the cookie sheet for 5 minutes before removing.
