3 medium yams (sweet potatoes) (1½ cups)
¼ cup brown sugar, packed
1 teaspoon flour, sifted
¼ teaspoon salt
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon grated orange zest
1 teaspoon soft tub dairy free margarine
½ cup orange juice
Preheat an oven to 350ºF.
With skins on, cut the yams in half and boil until just tender, about 20 minutes. When cool, peel and slice into ¼-inch thick rounds.
In a small bowl, combine the sugar, flour, salt, cinnamon, nutmeg, and grated orange peel.
Place half of sliced yam pieces in medium-sized casserole dish and sprinkle with sugar mixture.
Dot with half of the margarine.
Add a second layer of yams and top with the rest of the ingredients in the order above.
Drizzle orange juice over the yams.
Bake uncovered for 20 minutes.
