1 teaspoon olive oil
1 small onion, chopped
4 stalks celery, chopped
1/2 teaspoon salt
7 cups water, or chicken broth
2 medium potatoes, peeled and diced
4 garlic cloves, minced
1 bay leaf
Thyme to taste
Parsley to taste
Heat the oil over medium heat and add the onion and celery. Season with salt and cook for about 10 minutes, stirring frequently until tender.
Stir in the potatoes, garlic, and herbs.
Add the water and broth and bring the mixture to a simmer for 30-40 minutes and cover.
Remove from heat when vegetables are tender.
Remove the bay leaf and puree the mixture with a food processor. Pour it back into the original cooking vessel to gently blend and heat through before serving.
