12 slices of whole wheat baguette
3/4 cup cooked edamame beans
1 7.5-ounce package farmer cheese
1/4 cup grated Parmesan cheese
Zest of 1/2 lemon
1 tablespoon lemon juice
1 tablespoon fresh basil, chopped
1 tablespoon extra virgin olive oil, plus more for drizzling
Salt and black pepper to taste
Preheat an oven to 425ºF.
Place the bread slices on a baking sheet. Drizzle with olive oil.
Toast for 5-7 minutes. Remove from the oven and set aside.
In a large bowl, combine the remaining ingredients (reserve a small amount of Parmesan cheese, basil, and lemon zest) and lightly mash them together. The edamame should only be slightly mashed.
Place a heap of the mixture on top of each bread slice. Garnish with reserved Parmesan cheese, basil, and lemon zest.
