3 1/2 ounces of dates
1 cup apple juice
1/2 teaspoon baking soda
1 cup of self raising flour (or 1 cup of cake flour and 1 teaspoon baking powder)
1/2 cup unsweetened cocoa powder
1 1/2 teaspoon vanilla
4 egg whites
3/4 cup artificial sweetener
2 teaspoon powdered sugar
2 tablespoons water (optional)
Preheat the oven to 335°F.
Boil the dates, apple juice, and baking soda in a saucepan. Once boiling, remove from heat and place a cover over the pan. Let the mixture cool.
Once fully cooled, place the mixture into a food processor, and blend until the mixture is smooth.
Layer parchment paper in a 7-8 inch cake pan.
Sift the cocoa powder and flour into a large bowl. Stir the date mixture into the flour and add the vanilla extract.
In a separate bowl, beat the egg whites until there are stiff peaks. While beating the eggs, gradually add in the artificial sweetener.
Fold half of the egg whites into the date mixture. Once completely combined, fold in the remaining half of the egg whites. 1-2 tablespoons of water may be added if the mixture seems dry.
Pour the mixture into the cake pan and bake in the oven for 35 minutes or until a toothpick inserted into the center of the cake comes out clean.
Place the cake onto a cooling rack and dust powdered sugar over it. Serve when cooled.
