1-1/2 cups sweetened coconut, shredded
2 egg whites
1/4 teaspoon vanilla extract
Dash of salt
2/3 cup granulated sugar

Set the temperature of the oven to 325°F.
Place the egg whites and salt in a bowl and beat with a hand mixer until a soft peak forms. Slowly add the sugar into mixture and continue beating until peaks are hard and shiny.
Fold the coconut into the mixture. Coat a baking sheet with cooking spray. Take 1 teaspoon of the mixture and place onto the baking sheet. Make sure each teaspoon is rounded like a cookie. Repeat until baking sheet is full.
Put the cookies in the oven for 18-20 minutes or until cooked and light brown. The cookies should be soft in the middle. The cookies can be served immediately while still warm or after they have cooled.
