1 1/2 cups shredded carrots
1/4 cup raisins
2 tablespoons light mayonnaise
2 tablespoons nonfat yogurt
1/2 tablespoon lemon juice
1 tablespoon gluten free vanilla protein powder
Dash of salt
Fill a small bowl with warm water and add the raisins. Allow the raisins to sit in the bowl absorbing the water for several minutes. After soaking, drain the raisins and squeeze dry.
Add the yogurt, mayonnaise, lemon juice, protein powder, and salt to a medium bowl and then pour in the carrots and raisins. Toss and mix the salad thoroughly before serving.
