4 cups cooked chicken, shredded
1 cup cheddar cheese, shredded
2 eggs, beaten
1/4 onion, chopped
1-2 teaspoons bread crumbs

In a medium-sized bowl, combine the cheddar cheese and chopped onion. Add the shredded, cooked chicken to the mixture, stirring well, and add salt and pepper to taste.
Using hands, form small, even balls. Coat the balls with the beaten egg and then roll in bread crumbs.
Heat olive oil in a deep pot over medium heat. Fry the croquets until golden brown. Serve.
