1 cup plain non-fat Greek yogurt
1/2 cup cocoa powder, unsweetened, sifted
1/2 teaspoon vanilla extract
1/2 cup semisweet or dark chocolate chips
1/2 cup liquid egg whites, room temperature
1/2 cup sugar

Microwave the chocolate chips in a microwave-safe bowl in 10 second intervals set at medium power. Stir between each interval and microwave until the chocolate chips are melted halfway.
In a large glass bowl, add the yogurt, cocoa powder, and vanilla extract and microwave for 30 seconds. Stir the mixture and microwave for another 30 seconds. Add the melted chocolate and stir. Set the mixture aside.
In a small saucepan, add the sugar and 2 tablespoons of water and cook over medium heat until the sugar has dissolved.
Boil the mixture at high heat for one minute and then remove from stove top and set aside.
Using a mixer, whip the egg whites in a separate bowl until soft peaks form.
Next, while mixing, add the sugar water slowly and at a steady pace. Beat until the mixture forms stiff peaks and feels cool.
Slowly add 1 tablespoon of the egg white mixture to the chocolate yogurt mixture and stir.
Lightly fold in the rest of the egg white mixture into the chocolate and yogurt mixture.
Slightly cover the chocolate mousse and refrigerate for 30 minutes. When ready to serve, top with strawberries if desired.
