1 teaspoon garlic, minced
1 small onion, minced
2 cups frozen cut spinach, thawed and drained
1/4 teaspoon ground black pepper
8 slides whole-wheat bread
1 medium tomato, sliced
1 cup shredded part-skim mozzarella cheese
Nonstick cooking spray
Preheat the oven to 400°F. Allow a large baking sheet to preheat in the oven for 10 minutes.
Coat a medium saucepan with cooking spray, and sauté the garlic over medium heat until garlic is soft. Add the onions, and cook until soft. Add the spinach to saucepan, and cook the mix until the spinach is completely heated. Add the black pepper, remove from the heat, and place aside to cool.
Once vegetables are cooled, assemble four sandwiches by layering one slice of bread, one slice of tomato, 1/2 cup of the vegetable mixture, 1/4 cup of cheese, and the second slice of bread.
Coat the preheated baking sheet with the cooking spray, and place the sandwiches on sheet. Bake the sandwiches for 10 minutes or until the top of the bread is browned.
Flip the sandwiches and bake for 5 minutes or until the other slice of bread is brown. Serve immediately.
