1 cup old-fashioned rolled oats (not instant)
1 cup non-fat milk
1 cup whole wheat flour
2/3 cup brown sugar
2/3 cup unsweetened applesauce
2 egg whites
1 teaspoon baking powder
1/2 teaspoon baking soda
4-6 tablespoon unsweetened cocoa powder
1/2 teaspoon salt
1 cup dark chocolate chips
Soak the old fashioned oats in the milk for one hour at room temperature.
Preheat oven to 400 degrees and lightly spray a muffin pan with non-stick spray.
Mix the oats and milk with the applesauce and egg whites until combined.
Separately whisk the flour, brown sugar, baking powder, baking soda, unsweetened cocoa powder, and salt together.
Combine the wet ingredients and the dry mix. Add dark chocolate chips and mix.
Spoon the mixture into the muffin pan and bake for 20-25 minutes.
