1/2 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla
3/4 cup cornoil
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups green apple, peeled, cored, and finely chopped
1 cup walnuts, chopped
Cooking spray
4 ounces fat-free cream cheese, softened
2 tablespoons butter, softened
1 cup powdered sugar
1 tablespoon maple syrup
Preheat oven to 350°F.
Add brown sugar, granulated sugar, egg, vanilla, and corn oil to a food processor, and blend the ingredients well.
Mix the flour, baking soda, and cinnamon, and sift the dry mixture. Add the processed sugar mixture to the sifted flour, and blend with an electric beater.
Add the apples and walnuts to mixture, folding them into the batter.
Coat a baking pan with cooking spray, and pour the batter onto the pan. Place the pan in the oven, and bake the batter until a toothpick comes out clean (about 20-25 minutes). Remove the pan from the oven, and transfer the cake to a wire rack.
Beat the cream cheese and butter using an electric mixer until smooth. Add the powdered sugar and maple syrup, and continue beating until the mixture becomes creamy. Spread the icing onto the top of the apple nut cake once it has cooled. Cut the cake into 24 bars before serving.
