1 1/4 cups dry black eyed peas
1 cup green bell pepper, diced
1/2 cup green onion, finely chopped
1/4 cup red bell pepper, diced
1/4 cup jalapeño pepper, finely chopped and seeded
3/4 cup low-calorie, gluten free Italian dressing
On a stovetop, bring 3 cups of water to a boil.
Add the black eyed peas to the boiling water, reduce heat, and simmer until the beans are tender (approximately 45 minutes).
Drain the beans and allow them to cool before mixing the cooked beans with the other vegetables.
Mix all the ingredients together and refrigerate. This dish may be served with tortilla chips or over lettuce.
