2 pounds boneless chicken breasts, cut into bite-size pieces
1-2 tablespoons olive oil
1 garlic clove, crushed
1/4 teaspoon ginger, ground
3/4 teaspoon red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1/2 cup water
1/3 cup soy sauce
Using a large skillet, first heat the olive oil and then add the chicken.
Fry the chicken in the oil until it is slightly browned.
Remove the chicken from the skillet.
Add rest of the ingredients in the skillet and cook over medium heat until softened and mixed well.
Add the chicken and bring to a complete boil.
Lower the heat and let it simmer for 20 minutes.
Serve hot over white rice.
