1 3/4 cup sugar, divided
6 ounces fat-free cream cheese, softened
1/2 cup butter
1 teaspoon vanilla extract
2 large eggs
1 1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons ground cinnamon
3 cups chopped peeled apple (about 2 large apples)

Preheat an oven to 350°F.
Add 1 1/2 cups sugar to the cream cheese, butter, and vanilla in a large mixing bowl mix until well blended. Add the eggs one at a time and mix well after each addition.
Combine the flour, baking powder, and salt into a small bowl and mix well. Slowly add the flour mixture to the cream cheese mixture. Beat at low speed until well blended.
Combine 1/4 cup sugar with the cinnamon in a small bowl.
In a separate bowl add 2 tablespoons of the cinnamon-sugar mixture to the apples. Stir the apple mixture into batter.
Spray an 8-inch spring form pan with cooking spray and pour in batter. Sprinkle the top of batter with the remaining cinnamon-sugar mixture.
Bake for 1 hour and 15 minutes or until the cake pulls away from the side of the pan. Remove from oven and allow to cool completely.
