Ingredients

  • 4 skinless boneless chicken breasts

  • 1 tablespoon olive oil

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

  • 1 stalk celery, diced

  • 1/2 onion, diced

  • 1 small apple, diced

  • 1/3 cup seedless grapes, halved

  • 1/2 cup pecans, chopped

  • 1/2 teaspoon curry powder

  • 3/4 cup mayonnaise

Directions

  • Preheat an oven to 350°F

  • Place the chicken in a baking dish and coat with olive oil, salt, and pepper.

  • Cook for 20-25 minutes or until no longer pink in the middle.

  • Allow the chicken to cool completely.

  • Meanwhile, combine the rest of the ingredients in a bowl.

  • Dice the chicken and add it to the mixture.

  • Chill for 1-2 hours or until ready to serve.

  • Serve on top of a garden salad (gluten free) or on choice of bread in a sandwich.
